Cabbage soup recipes

· Rustic Cabbage Soup Recipe:
Ingredients: 1 tablespoon extra virgin olive oil; a big pinch of salt; 1/2 pound potatoes, skin on, cut 1/4-inch pieces; 4 cloves garlic, chopped; 1/2 large yellow onion, thinly sliced; 5 cups stock; 1 1/2 cups white beans, precooked or canned (drained & rinsed well); 1/2 medium cabbage, cored and sliced into 1/4-inch ribbons; more good-quality extra-virgin olive oil for drizzling; 1/2 cup Parmesan cheese, freshly grated.
Directions:
Take a medium size pot with a thick bottom , drizzle some oil on the bottom and place it on the stove at medium heat. Once the oil is hot take the potatoes and put them in the pot, sprinkle some salt over them and let them cook. After 5 minutes they should be brown and tender, that is about the time you should be adding the onions and the garlic. Let them cook for about a minute and add the canned beans and the stock. Once the entire composition has come to a simmer add your cabbage and stir. Let the cabbage cook until it softens. Season the dish with some salt and serve.
· Potato and Cabbage Soup Recipe
Ingredients: 1 large onion, chopped; 2 tablespoons butter; 10 cups water; 6 cups chopped cabbage; 4 cups diced peeled potatoes; 3 tablespoons chicken bouillon granules; 1/2 teaspoon coarsely ground pepper; 1/2 teaspoon dried minced garlic; 4 cups cubed fully cooked ham.
Directions:
Take a large saucepan or a Dutch oven and place it on the stove. Add some butter into the pan and start to sauté some onions. Once the onion is tender you can add the water, cabbage, potatoes, bouillon, pepper and garlic into the pot. The vegetables must be clean and chopped in medium sized pieces. Take a lid and place it over the pot. Let the dish on the fire until everything is cooked, the potatoes will take the longest. At the end add the ham and let it heat in the composition and that is all. Serve the soup while it is still hot.
